Usually you need less time or lower temps. I prefer to use lower temps. Not all convection ovens are the same. Follow manufactures directions.

I live at 4500 ft. elevation. I cook (simmer) brown rice for an hour in a heavy bottom tightly covered pan. If you do not have a pan with a tight lid, seal with aluminum foil. Let stand at least 30 minutes before taking the cover off. Taking the cover off to check for doneness will only increase cooking time.
1 cup brown rice (rinsed until water runs clear)
2 1/2 cups water or broth

It's all down hill from Zion to Vegas, so weather is not likely to be an issue. Early November is a good time to visit Zion. Fall colors will be at their heights. Road is open but services at the North Rim close down mid October. It very seldom snows in Las Vegas. There will be many mild days. However, it can get cold and windy in winter.

We had a good wifi connection last October at Cadillac Ranch. Got cell signal at top of hill going toward Blanding. Also had good wifi connection at Gouldings in Monument Valley.

We liked Ruby's, but haven't been there for several years. Panguitch KOA has wifi. Not the best KOA and not the worst. Thirty minute drive to Bryce.

Sure, do it all the time. If you don't use beer for the liquid, then I suggest that you use some kind of carbonated soft drink. Citrus flavor for fish or chicken, coke or root beer for pork or beef.

The real trick for good fried rice is to cook the rice ahead of time and refrigerate for at least 4 hours or overnight. Just cooked rice is quite mushy and will be gooey if you try to recook right away.

The reason I chose the proposed route is that during our 2005 trip, smoke from wild fires obscured the view along the Fraser/Thompson Rivers. We decided to revisit this area some day when the atmosphere was more desirable. As to the route south from Revelstoke, We also prefer the roads less traveled and avoid freeway type roads when ever possible.
I appreciate and thank you for all your comments. However, I had hoped to get comments re road conditions and or got'chs on our proposed route.

We purchased a Black & Decker Convection Countertop Oven/Broiler for our new 5th wheel last year. It worked so well that I have never used the regular oven. We paid about $70.00 at Target in Chattanooga, TN. I think that they are selling for about $100.00 now.
